Rhubarb (Rheum)

Rheum, the rhubarbs, brings bold foliage and cool-climate substance to edible and ornamental gardens. The plants emerge from thick crowns with large leaves on fleshy petioles, creating a broad, architectural mass early in the season. Culinary rhubarb is valued for its red, pink, or green leaf stalks, while ornamental species may carry immense, deeply textured leaves that make a dramatic statement near water or in rich borders. The leaves themselves are often heart-shaped to rounded, veined and pleated, with a surface that can feel almost prehistoric in scale.

Flowering stems rise above the foliage in late spring or summer, carrying large panicles of small creamy, greenish, or reddish flowers. In edible rhubarb these plumes are often removed to direct energy to the stalks, but in ornamental plantings they can be striking, adding height and a soft froth above the heavy leaves. The contrast between the dense basal foliage and airy inflorescence gives Rheum much of its visual interest. It is a plant of mass and appetite, but also of surprising delicacy when the flower plume catches light.

Rheum prefers deep, fertile, moisture-retentive but well-drained soil and a cool season of strong growth. The edible stalks of culinary rhubarb are harvested with care, while the leaves are toxic due to high levels of oxalic acid and should not be eaten. Heat and drought can exhaust plants, and crowns benefit from space, mulch, and periodic division when vigor declines. In design, rhubarb can be used honestly as both crop and ornament, its large leaves offering a handsome counterweight to fine grasses, alliums, and spring bulbs. Its beauty is robust, tactile, and deeply rooted.

Rhubarb’s large leaves can be a powerful design tool even when harvest is the main purpose. A single crown at the end of a vegetable bed or near a path gives weight to finer crops, and ornamental species can serve almost like herbaceous sculpture in damp soil. The plant looks best when given space and mulch, not squeezed into a row where its generous leaf architecture cannot unfold.
