Grow Dysphania ambrosioides (Epazote) for its distinctive, pungent aroma and flavorful leaves used in traditional cooking. In warm climates it can act as a short-lived perennial, but most gardeners grow it as a fast annual herb that readily reseeds.

Give your plant full sun and average to moderately fertile, well-drained soil, and water to establish; once growing, let the top of the soil dry slightly between waterings. If it gets lanky, pinch back tips to encourage branching. In the garden it can spread by seed, so place it where volunteers are welcome or remove flower spikes before seed set.

Harvest young leaves and tender stems as needed through summer and into fall. Use sparingly for the strongest flavor, and cook leaves into dishes rather than eating large amounts raw. Keep this plant out of reach of pets and children and avoid consuming the seeds.
